Mini Chicken Burgers
Nutritional Information: Calories 382, Fat 21g., Sat Fat 4g., Cholesterol 122 mg.,
Carbs 27g., Protein 30g., Fiber 2g.
 
Ingredients
½ pound ground chicken
2 tsp. hoisin sauce
Freshly ground pepper
3 Tbs. reduced fat mayonnaise
1 Tbs minced chives
1 tsp lemon juice
½ tsp hot Chinese mustard
6 slices bread
6 grape or cherry tomatoes, halved
6 slices baby lettuce
 
Preparation
1.     Gently mix ground chicken, hoisin sauce and ground pepper in a bowl. Shape chicken into six patties. Spray a large nonstick skillet with cookingspray; heat over medium heat. Arrange patties in skillet so they don’t touch. Cook 3-4 minutes. Turn; cook until cooked through, about 3 minutes.
2.     Meanwhile, mix mayonnaise, chives, lemon juice and mustard in a small bowl. Toast bread slices (or brown on grill). Cut 2 circles from each bread slices with a 2-inch cookie cutter.
3.     Place one burger on each of 6 bread rounds. Top each with a small dollop of sauce. Arrange 2 tomatoe halves over the sauce. Top with a lettuce leaf. Top with remaining 6 bread rounds
