Wehani Rice Salad From The Eat Clean Diet Cookbook By Tosca Reno Wehani rice is delicious popcorn-flavored rice loaded with nutritious complex carbohydrates. Try it in this salad or next time you want rice for dinner. INGREDIENTS 3 cups hot cooked Wehani rice 2 Tbsp best-quality olive oil Juice of half of one fresh lemon 2 Tbsp balsamic vinegar 2 cloves garlic, passed through a garlic press ½ tsp dried rosemary ½ tsp fresh ground pepper 1 cup fresh basil, finely chopped 2 red bell peppers, seeded and chopped ¾ cup sundried tomatoes, chopped 5 scallions, trimmed and chopped PREPERATION Place rice in a large decorative serving bowl. Combine oil, lemon juice, vinegar, garlic, rosemary and black pepper in a jar or container with tight-fitting lid. Shake well. Pour over rice and toss gently. Add remaining ingredients and toss again. Serve immediately or refrigerate. |
