Pear & Walnut ‘Rice’ Salad
3 C. brown rice or couscous, cooked (For gluten-free, use quinoa)
1 large firm pear, cored & diced
3 medium green onions, chopped
½ C. chopped walnuts, toasted
1/3 C. crumbled feta or blue cheese
1/3 C. raspberry vinaigrette
½ t. salt
¼ t. pepper
Combine all ingredients in medium bowl; toss to coat.
Top with dried cranberries.
